Burger with hidden talents....

Ok this post has been sitting in draft section for so long.... its ridiculous. I mean how hard can it be to write few words about the recipe I am going to post. Well .. ummmm .. very hard because I have been always blank whenever I got down writing it!!!! The thing is ..... my family love their bird :-) . So you can guess burger at my place means a chicken affair.  But I wanted to try something vegetarian that one day......I guess it was over dose of  "the bird"! Its really a struggle to get my kids to eat their portion of veges..generally it stops at second bite. But what do they know.. I am the mom and quite devious at hiding the veges ;-)

Well I remember this idea from my sister, where she inserted cheese piece in chicken patty. Same idea .... vegetarian affair. Lots of vegetables sauted dry then mixed with potatoes to make thick patties. Hide your cheese somewhere in the middle and be  surprised !!!

Now lets get to the process, shall we?  



Ingredients

1/2 tbsp heaped chopped ginger
1/2 cup chopped onion
1/2 cup grated carrot
1/2 cup grated cauliflower
1/2 cup grated brocolli
1/2 cup chopped red cabbage
1 1/2 cup boiled and mashed potato
1/4 cup chopped cilantro
1/4 cup bread crumbs + some for coating.
Salt and pepper to taste
1/4 cup cubed small cheese ( I used Havarti cheese )

Get Cooking

Heat about a teaspoon of oil and add ginger and then onions. Let onion sweat for few seconds. Add rest of the vegetables - carrots, broccoli, red cabbage and cauliflower. Saute until completely dry. Doesn't it look colorful?
Add mashed potatoes, chopped cilantro, salt and pepper. Mix thoroughly and then turn of the heat. After it cools down, add the bread crumbs and mix. Now take a big lemon size ball of the mixture and flatten it like a patty. Take few cheese cubes and press it gently inside the patty. Gently gather potato mix from the side so that the cheese is completely hidden. This is important otherwise cheese on surface will burn when shallow fried. The roll the patty in bread crumbs and press gently. Shake of excess crumbs.
Heat oil in pan and gently drop the patty. Once crisp on the surface, flip on the other side. Drain on paper towel.

Lightly toast hamburger buns, apply a thin layer of any sandwich spread/chutney/mayonnaise of your preference. Put the patty between slices and take a bite.......mm.mmmmm. 

Its not the best presentation picture....but what do you expect when a hungry bear is making this delicious burger at 9 PM just waiting to devour it? I just about managed to take a picture before attacking LOL!!!!

Note :
  1. I kept the flavors simple for my kids and did not add many spices. You can add green chillies, chat masala, mint etc to add more flavor.
  2. You can use any type of cheese that stands a bit of cooking like cheddar, Gouda, mozzarella....
  3. I made around 7-8 patties. Left over patties I stored in my lock n lock container. These patties tasted even better probably because the bread crumbs soaked up the flavor from veges. I would suggest letting the mix stand for little bit.
